Just call me master...

I'm going to go ahead and brag a little here because I was partially awesome today!

I'll spare you gross details but it involved a just drifted sleeping toddler and a dirty diaper and ended in a still sleeping and fresh diapered toddler! Ya I know totally awesome!

Now on to the good stuff. Food! I try to be conscience of what we are eating and try not to feed much junk but lets face it sometimes junk makes all the difference. Now I'm not sure how to classify tonight's awesome supper besides out of the park home run!!! Cilantro Lime Chicken is what was on the agenda, however this beef raising family was fresh out of chicken so I used hamburger and made it Cilantro Lime Taco's and let me tell you yum yum yum! It smelt so good the rancher stayed home from basketball... Almost. :)

Cilantro Lime Tacos

1 lb hamburger
1 lime juiced and smooshed inners
A couple hand fulls of cilantro
1/3 taco seasoning packet
Chopped onion (I just chop until I think it's enough)
1-2 tbs of sugar
1 tsp garlic powder

Brown hamburger, season, use food processor to blend cilantro and lime, added that to hamburger. And tada!

To make the meal complete make homemade guacamole and slice up some tomatoes.

For the guacamole I only had one and added 4-5 cloves I pressed garlic and a couple dashes of salt to taste. I used the stir option on my food processor and it worked great.

I served in a bowl with crunched up chips, sour cream, guacamole and my moms kick butt salsa. On my second bowl ;) I used tostitos pineapple mango salsa which I highly recommend as well! :)

I didn't take a picture until after but seriously give this a try it is soooo yummy!

There was some not so awesome parts to my day including income tax prep and an uncooperative washing machine. But I'll focus on the positives for today!

Have a great week everyone! And let me know if/when you try this awesome meal!
